Delicious Zucchini Chips


Life is Too Short to not eat these delicious Zucchini Chips! They are soooo good, soooo easy and get this, they are slightly adapted from Health.com, only 61 calories per serving (makes 4 servings). But don't to take my word for it, try them today! It's now May which means zucchinis are in season. In the spring/summer months I probably make 1 to 2 zucchini dishes a week. I make these at least 2, maybe more, times a month. They are just so good! Enough chit chat, here is the recipe:

1/4 cup dry breadcrumbs
1/4 cup grated Parmesan Cheese
1/4 tsp garlic salt
1/4 tsp garlic powder
2 Tbsp fat free milk
2 small zucchini
cooking spray
separate 

Let's get cooking! Grab your two zucchinis and preheat your oven to 425 degrees

Now slice your zucchinis about 1/4 inch think. 


You don't have to be accurate but be sure you are consistent in thickness so that they all cook evenly.

On a small dish, combine the 1/4 cup breadcrumbs, 1/4 cup grated Parmesan, 1/4 tsp garlic salt and 1/4 tsp garlic powder.

Mix it all together. I like to use my fingers but that's just me ha ha

Pour the 2 Tbsp milk onto a separate small dish 

 Dip the Zucchini in the milk. Turn it over and get the other side coated as well. Shake off the excess milk.

Take the zucchini chips and put them in the breadcrumb mixture. 

This is important, using the hand you didn't use to take them out of the milk and flip them over in the breadcrumbs. If you use the same hand, you'll get these gross breadcrumb sludge covered fingers then you dip them back in the milk and you get breadcrumbs floating in there and it gets messy really quick. Learned that from experience ha ha

The original recipe says to put them on a wire rack. Personally I like to put them directly on a cookie sheet. I find it makes them a bit more crispy and I like that. Either way you choose, be sure to spray the wrack or the cookie sheet with baking spray to prevent sticking

Pop them in the oven for 30 minutes or until brown and crispy. These look delicious don't they? Serve immediately. These don't keep so be sure to eat them all! Not that it will be hard, they scrumptious!
